Our kitchen

Most Kerala food brands publish a photograph and an adjective. We would rather publish the spec — including the parts we are still confirming.

Who makes what

Three different things sit under the Routzell name, and it matters which is which. We label every product page accordingly.

Fresh Eats — pickles	OUR MANUFACTURE Made by us in Thiruvananthapuram under FSSAI Lic. No. 11323001001236. Fish pickle, mango, lemon and puliyinchi. Cured in oil with vinegar and salt.
Arisi Heritage Kitchen — breakfast	OUR MANUFACTURE Idiyappam, idly, vellayappam, porotta, puttu and chapati, made to order for institutions. Currently supplied to Lulu, Thiruvananthapuram.
Madhuram — chips and savouries	WE DISTRIBUTE Manufactured by Mahasreevari Food Industries under the Madhuram brand. We buy, stock and distribute them. We do not make them, we do not sell them under our own name, and we do not offer them for export or private label.

What we publish on every product

Pack size, shelf life, the full ingredient list, the frying or cooking oil, the allergen line, storage instructions, the vegetarian or non-vegetarian mark, and who manufactured it with their licence number.

Where a value has not been confirmed in writing yet, the page says On request rather than guessing. Several sourced products are waiting on written declarations from the manufacturer. We would rather show you the gap than fill it with something we cannot stand behind.

The claims we do not make

We do not describe factory-made food as homemade. Under the FSS (Advertising and Claims) Regulations 2018 that claim is not available to a licensed commercial kitchen, whatever the recipe.
We do not use the word organic. That requires NPOP or PGS-India certification, which we do not hold.
We do not say no preservatives where vinegar is doing the preserving. Our pickles carry no added chemical preservatives — they are preserved with vinegar, salt and oil, which is how Kerala pickle has always been made.
We do not print a shelf life we cannot support. Coconut-oil fried snacks stay genuinely good for weeks, not months, whatever a longer printed date might suggest.

Being straight about the frying oil. Coconut oil rather than palm oil is the difference worth paying for in Kerala snacks, and it is the claim we most want to make. We are not making it yet on the distributed range, because the frying oil has to be confirmed in writing by the manufacturer first. When it is confirmed, it will appear on each product page with the ingredient list — not before.
